CHOCOLATE FUDGE BROWNIES

Ingredients

Dry Ingredients

  • 6   Tablespoons coconut oil
  • ½   Cup coconut sugar
  • 2   Whole eggs [vegan substitute: 2 serves vegan egg replacer mix]
  • ¾   Cup almond meal – FLANNERYS (can use other brands)
  • ¼   Cup raw cacao powder – PROMISE NUTRITION (can use other brands)
  • 1 ½ Teaspoons baking powder
  • ½   Cup dark chocolate chips
Method
  1. Pre-heat oven to 180 degrees and line a square 8 x 8 square tin with baking paper
  2. Add coconut oil & coconut sugar to a medium sized bowl and whisk until combined
  3. Add eggs & whisk vigorously for 2-3 minutes until light bubbles appear [this will give your brownies a crust]
  4. Add almond meal, cacao powder & baking soda & fold into the batter
  5. Fold chocolate chips into the mixture
  6. Pour into your prepared tin and bake for 17-20 minutes until the crust is cooked but the centre is still gooey 
PEANUT BUTTER SAUCE
  1. Add ¼ Cup rice malt syrup & ¼ Cup peanut butter to a saucepan over low heat
  2. Add ¼ Cup coconut oil 
  3. Stir until melted and smooth
  4. Pour over your warm brownies & EAT!!!!

JAFFA BLISS BALLS

Ingredients
  • 1 Cup Medjool Dates (soaked in dates for 10 minutes)
  • ¾ cup Macadamia nuts
  • ½ cup raw cacao powder – PROMISE NUTRITION (can use other brands)
  • Juice of one orange (approximately 1-2 Tablespoons)
  • ½ Teaspoon greens powder – NUTRA ORGANICS

Method

  1. Blend macadamia nuts into fine crumbs
  2. Add the dates, cacao, orange juice & greens powder
  3. Blend again until smooth in texture
  4. Roll into balls using the palms of your hands and demolish as is or coat in raw cacao powder
